综述了清凉化合物的化学结构 ,清凉感的作用机理 ,影响清凉感的因素 。
The chemical structures of cooling compounds,the mechanism of cooling effect production,and factors affecting cooling effect were reviewed. The exploration of novel cooling compounds and their appilications in the food industry were discussed.
