摘要
研究了香豆胶的干法和湿法两种加工工艺。干法工艺中提胚工序的得胚率只有20%~22%;湿法工艺是将干法工艺中的单个提胚工序分解为浸润、一次分离、二次分离3个工序,提高了胚乳片韧性,使得胚率提高到27%~30%。本文对水化工序的胚乳片含水率、水化时间、水化温度,增黏工序对胶粉黏度的提高,粉碎工序的胶粉细度分布,以及湿法工艺中二次分离工序的浸润水温等工艺参数对胶粉黏度的影响和浸润后香豆含水率与得胚率的关系进行了深入研究。
