摘要
目前,食用油中苯并[a]芘的污染已经引起世界各国的广泛重视,我国政府和油脂行业科研工作者也对其进行了大量的科学研究,本文重点阐述植物油中苯并[a]芘的来源,食用油精制过程中苯并[α]芘的控制与处理关键工艺方法,包括质量管理控制点、精制生产技术控制点、小包装油灌装控制点、消费者科学用油过程中对苯并芘控制技术的研究进展进行了综述,以期为行业内技术人员解决此问题提供借鉴。
At present,the pollution of benzo[a]pyrene in edible oil has caused extensive attention of the countries all over the world,the scientific research workers of our country have carried on a lot of scientific researches. The discussion of the origin for benzo[a]pyrene in vegetable oil was focuses on,the research progress on the key techniques for controlling the process of oil refining for edible oil,including the control points of quality management,refined production technology control point,small packaging oil filling and consumers' scientific use of oil were summarized,to provide references for the technical personnel in the industry to solve this problem.
