摘要
烟烘粮食可使其被污染一定量致癌物亚硝胺及硝酸盐和亚硝酸盐等前体物,能使实验动物致癌。为了对粮食减毒防癌,本文研究了分解减毒的机制。我们发现用紫外线照射可使之分解,且减毒率与照射距离,时间及通风相关。
Dry by smoking is a commonly used way to dry grains in our province. The dried grains can be polluted by the carcinogen (nitrosaminc) and its precursors (nitrate and nitrite). These substances can induse cancer of experimental animals. In order to provide theoretical and practical foundation in decreasing the substances and preventing cancer, we studied the mechanism of decomposition of the substances and discovered that ultraviolet could decompose the substances and the decomposition rate was correlative with irradiating distance, time and ventilation (r>0.05).
