摘要
通过对杭州新老名菜的品种类型、刀工成形、烹调方法、滋味类型、色彩、质感等六个方面进行量化分析,得出杭州新老名菜的总体特点,并比较分析。
This paper studies on the total characteristics of traditional and new famous dishes in Hangzhou by standardized analysis to the types, shapes, cooking methods, tastes, colors and other sense qualities.
