酒店“绿色厨房”建设的现状分析与对策研究

摘要 自国家颁布《绿色饭店标准》之后,"绿色饭店"的创建已全面铺开,而"绿色厨房"的建设未得到充分重视。该文通过对当前酒店厨房非绿色现象的分析,指出了"绿色厨房"建设的紧迫性,并从树立绿色理念、制定考核标准、建立监控机制和运用绿色科技等方面提出对策。 Since the promulgation of the "Standards of Green Hotel", the construction of Green Hotel has been under way,while the construction of "Green Kitchens" has not attracted sufficient attention. This paper points out the urgency of constructing "Green Kitchens", based on the analysis of the current situation of nongreen kitchens. It also intends to put forward proposals to establish ideas, set evaluation criteria, build up monitoring systems and adopt green technology.
