影响窖泥退化、板结的原因有:窖泥配方、酸度、水分、乳酸钙、乳酸铁等白色物质的形成与析出、营养成分的减少、发酵条件的变化、窖泥周围环境等。提高窖泥活性的措施有:用窖泥养护液喷洒窖壁与窖底,剥减退化窖池表层,在酿酒生产过程中实施以窖养醅、以醅养窖、养护结合的措施。(孙悟)
