摘要
影响窖泥退化、板结的原因有:窖泥配方、酸度、水分、乳酸钙、乳酸铁等白色物质的形成与析出、营养成分的减少、发酵条件的变化、窖泥周围环境等。提高窖泥活性的措施有:用窖泥养护液喷洒窖壁与窖底,剥减退化窖池表层,在酿酒生产过程中实施以窖养醅、以醅养窖、养护结合的措施。(孙悟)
The affecting factors of pit mud degradation and hardening cover ed the following aspects:pit mud prescription,the acidity,moisture content ,fo rmation and separation of calcium lactate and ferric lactate etc.white material s,the decrease of nutrient contents,changes of fermentation conditions,and t he environments of pit mud etc.The solutions to improve the activity of pit mud included:pit mud maintenance liquid sprinkling pit walls and pit bottoms ,str ipping the degradation surface layer of pits,and practice of the method of pits maintenance by fermented grains,and combination of curing and maintenance of p its.(Tran.by YUE Yang)
