温度、赤霉素和乙烯处理对采后豌豆苗纤维合成及品质变化的影响 被引量:18

摘要 研究了温度、赤霉素和乙烯处理对采后豌豆苗 (PisumsativumL .)纤维合成和品质变化的影响。结果显示 ,采后豌豆苗在 7和 13℃低温贮藏 72h后 ,纤维素含量分别比 2 0℃贮存的对照低 5 5 .1%和 33.7% ,叶绿素和可溶性糖含量显著高于对照 ;赤霉素抑制了采后豌豆苗的纤维合成并延缓叶绿素、蛋白质及可溶性糖含量的下降 ;乙烯则促进了纤维合成、并加速叶绿素、蛋白质、可溶性糖含量的下降。测定表明 ,低温显著抑制了纤维合成相关的酶如苯丙氨酸解氨酶、多酚氧化酶、肉桂醇脱氢酶和过氧化物酶的活性 ;低温和赤霉素能延缓采后豌豆苗品质下降 ,而高温和乙烯则加速豌豆苗品质下降。 The effects of temperature,gibberellic acid and ethylene on fiber synthesis and quality of excised pea seedlings (Pisum sativum L.) were studied. The fiber content of the seedling stored at 20℃ was 55.1% and 33.7%, higher than those stored at 7 and 13℃, respectively. The chlorophyll and total soluble sugar levels of seedlings stored at 7 and 13℃ were remarkably higher than those stored at 20℃. The fiber synthesis was retarded by gibberellic acid(GA), but enhanced by ethylene. The decomposition in soluble protein, chlorophyll and soluble sugar were inhibited by GA, but stimataled by ethylene. Low temperature reduced the activities of the enzymes related to fiber synthesis, including phenylalanine deaminase, polyphenol oxidase, cinnamyl alcohol dehydrogenase and peroxidase. It was suggested that the quality of the pea seedling was improved by GA and low temperature, but reduced by ethylene and high temperature.
