本文分析了主要凉味剂的立体构型 ,简单介绍了以L -薄荷脑 (又称L -薄荷醇 )和L -薄荷脑为基本骨架的酯类、醚类和缩酮类化合物的结构和味觉特征 ,它们的安全性以及在食品、口腔卫生用品、化妆品和肤用药中的应用。
The stereochemical structure of the major cool flavorings were discussed. Those derivatives were esters, ethers of L-menthol and ketals of L-menthone. Their structures, taste characters, safety and applications in food, oral preparations, cosmetics and skin pharmacies were introduced simply.
