摘要
应用单因素实验探讨了大豆豆渣中抗氧化物的最佳提取工艺,为在60℃下,用6倍于豆渣(湿重)的体积分数70%乙醇溶液浸提3h,并研究了其在植物油中的抗氧化作用,效果良好。
The optimum conditions of extracting antioxdative mixture in the bean dr egs were investigated by using the single factor design.Resu lts showed that 6:1of 70%ethanol to t he bean dregs weight ratio and extracting for three hours were optimal at 60℃?On the base the antioxygenation of th e extract was studied in the rape oil.The graph of POV showed that the extract i s a good antioxidant.
