摘要
对花生内衣色素的特性进行了初步探讨。结果发现 :该色素属于水溶性色素 ,最大吸收峰值为 390nm ;该色素在弱酸性及中性条件下 ( pH =4～ 7)、温度在 2 5～ 65℃范围内稳定性较好 ;光、氧化剂、还原剂、盐、糖和金属离子 (除铁离子外 )
The pigment′s stability of peanut has been analyzed in this paper.The result is that the pigment can be dissolved into water and it′s maximum absorption spectrum peak is at 390nm;that it is stable within the pH range 4～7,temperature(25～65 degree),light,Oxidizing agent,reducting agent,salt,sugar and metal ion(except for Fe 2+ )?
