摘要
从CFU、pH及酸度(°T)这三个角度对保加利亚乳杆菌的生长动力学性质进行了初步的研究。实验结果表明,保加利亚乳杆菌的生长动力学性质满足典型对数生长曲线规律,且其世代时间(G)为50~90min,延滞期约为2h,对数生长期为2.5h左右。在整个培养期间内,pH随培养时间(t)的延长而降低,酸度(°T)随培养时间(t)的延长而升高。
In this paper,the preliminary study of g rowth kinetics of Lactobacillus bulgaricus has been done with three factors including CFU、pH and°T.The result shows that the g rowth kinetics of Lactobacillus bulgaricus ag rees to the typical exponential curve,the g eneration time approximately varies from50minutes to90minutes,the lag g ing phase is about 2hours,and the exponential g rowing phase is about 2.5hours.During the course of culturing ,the acidity increases with the culture time g oes,while the pH is not.
