摘要 食品腐败的主要原因是由于其中的一些微生物及细菌的存在,因而在保存之前必须进行灭菌。但是,传统的加热灭菌方法不能杀灭食品中的所有细菌,并且不能保持食品的原有风味,而高电压脉冲灭菌法却几乎能杀灭食品中的所有细菌,同时保持食品中的原有风味不变。 The decay of food is mainly due to some of the microbe and the bacterium, so the sterilization must be done before preservation. But the traditional sterilization by heating can not kill all bacterium in the food, and can not hold the flavor of food. But the sterilization by high-voltage pulse can almost kill all bacterium in the food, and preserve the flavor of food.
