摘要
以湖南省山地和丘陵茶区的安化群体品种为原料,通过复因子组合处理及理化分析,对乌龙茶传统工艺进行了改革试验,提出了切合湖南实际的乌龙茶加工新技术及其理论依据。
The purpose of the studies is to exploit new products of Oolong and to satisfyforeign or domestic needs The material used is Anhua Oolong species in hilly and mountain-ous areas of Hunan. Through processing combination of double factors at different levels andphysical and chemical analysis of tea, the studies suggest a series of Oolong tea processingtechniques practicable in Hunan in place of orthodex manufacture and give its further theo-retical explanation. The results will play a key role in readjusting the structure of tea prod-ucts and stimulating production of Oolong tea in Hunan.
