摘要
试验采用含有高浓度酒精选择性培养基从自然界中分离得到 1 1 5株耐高酒精酵母 ,经过初筛、复筛 ,得到 1株高产酒精酵母菌株SP 48,在料水比 1∶2 ,发酵 72h的条件下 ,静止发酵 ,成熟醪酒精的体积分数可达 1 6 2。经鉴定该酵母为酵母属 (Saccharomyces)的酿酒酵母 (Saccharomycescerevisiae)。
