摘要
铁观音独具"观音韵",兼具绿茶的清芳香和红茶的浓鲜醇甘而深受消费者的喜爱,因此铁观音保鲜技术的研究具有重要意义。综述了铁观音的物理和化学保鲜技术的新进展,尤其是化学保鲜技术,意在为铁观音茶叶的保鲜技术进一步研究提供理论依据,同时对铁观音保鲜技术的研究进行展望,开发更多的铁观音保鲜新技术。
With the specialty of“Guanyinyun”, Tieguanyin has the freshness and fragrance of green tea and strong sweetness of black tea and is deeply loved by consumers, so the research of Tieguanyin fresh-keeping technologies is of great significance. The paper reviews the new development of Tieguanyin's physical and chemical fresh-keeping technologies , especially chemical technologies. It aims to provide theory evidence for the further study of Tieguanyin tea's fresh-keeping technologies. Simultaneously, the paper looks forward to carrying out the Tieguanyin fresh-keeping technologies research and developing more advanced Tieguanyin fresh-keeping technologies.
