摘要
惠州梅菜有几百年的历史,享誉中外。从惠州梅菜的营养功能、加工工艺、消除亚硝酸盐等3个方面对梅菜的研究发展进行综述可知,应采用先进的加工工艺技术消除亚硝酸盐,才能促进梅菜产业的发展。
Huizhou Meicai has a history of several hundred years,and enjoys enormous popularity throughout the world.The research and development of Meicai's are reviewed from nutritional function,processing technology and elimination for nitrite. It shows that taking eclanced processing technology and eliminating nitrite can promote the deveolpment of Meicai industry.
