摘要
采用三因素三水平正交试验,研究不同亲水性物质(甘油、阿拉伯胶、氯化钠)对青果槟榔水分活度(Aw)的影响。研究结果表明,3种亲水性物质对青果槟榔Aw的影响次序依次为阿拉伯胶>甘油>氯化钠,降低青果槟榔Aw的最佳组合为阿拉伯胶质量分数3%,甘油质量分数3%,氯化钠质量分数2%;此时,水分为27%左右的成品槟榔Aw为0.88~0.89,而对照组槟榔的Aw为0.91。降低水分活度为槟榔产品的防霉保鲜提供了新的技术方法。
Research is made of the application of different hydrophilic substances,such as glycerin,gum arabic and sodium chloride,on the effects of water activity(Aw) of areca production by adopting the L9(34) orthogonal experiment. The results show that the capability of them is gum arabic>glycerin>sodium chlorid. The optimum compounding is composed as follows:3% gum arabic,3% glycerin,2% sodium chloride. The Aw value is 0.88 to 0.89 in optimum compounding conditions with control Aw value is 0.91. Lowing water activity provides a new technical approach to anti-mildew and preservation of areca products.
