超细粉碎大豆皮水不溶性膳食纤维理化特性的研究 被引量:8

摘要 水不溶性大豆皮膳食纤维通过频率分别为100,200,300 Hz的气流粉碎机粉碎,得IDF-a,IDF-b,IDF-c3种不同粒径超细膳食纤维,并对它们的理化特性进行比较。研究发现,膳食纤维细粉随着体积平均粒径不断减小,D50呈现下降趋势而细粉的粒径与比表面积呈现反比关系,在IDF-c的体积平均粒径达到19.24μm时,比表面积最大约为152.29 m2/kg;不同处理下的膳食纤维细粉IDF-a,IDF-b,IDF-c的白度值分别是48.5%,54.8%,63.7%。根据Duncan多重比较的结果分析可得,随着细粉粒径的降低,其持水力、持油力皆呈现上升趋势,样品IDF-a与IDF-b的持油力差异不显著(p>0.05),而细粉IDF-a与IDF-c,IDF-b与IDF-c的持油力差异显著(p<0.05),同时细粉IDF-a,IDF-b,IDF-c的持水力差异性显著(p<0.05);三者溶液的黏度曲线都比较陡峭,黏度值都呈现上升趋势;细粉IDF-c的阳离子交换能力明显高于另外2种细粉。此试验研究结果可作为大豆皮水不溶膳食纤维改性方法的理论指导。 To crush the insoluble dietary fiber of soybean skin through pneumatic cracker with three different frequency which is 100,200,300 Hz,three different particle size of superfine dietary fiber IDF-a,IDF-b,IDF-c are obtained,and the physico-chemical properties of them are compared. The median diameter of IDF-c is 19.24 μm. While the specific surface area hsa a trend of increasing with the particle size decreasing,the most specific surface area is 152.29 m2/kg. The whiteness of IDF-a,IDF-b,IDF-c are respectively 48.5%,54.8%,63.7%. Through the result of Duncan,the water-holding capacity of sample IDF-a and IDF-b have no significant difference(p>0.05),the oil-holding capacity of IDF-a,IDF-b,IDF-c have significant difference(p<0.05),the water-holding capacity of IDF-a,IDF-b,IDF-c have significant difference(p<0.05).The viscosity curve of them is steep,the viscosity number has rise trend. Results show that jet mill increase the hygiene function of insoluble dietary fiber of soybean skin.
