摘要
在日常生活和食品加工业中,人们往往只是利用了鸡蛋中的蛋清和蛋黄,而蛋壳则被当作垃圾扔弃。蛋壳中残留的蛋清极易腐败,滋生蚊蝇,产生臭气和污水,既污染了环境,又造成了蛋壳资源的浪费,因此亟需对蛋壳的综合利用进行深入研究探讨。通过介绍蛋壳的结构组成和化学成分,综述了近年来蛋壳利用方面的研究进展,并对其前景进行了展望。
In our daily lives and food industrise,the egg yolk and egg white is large demand for people,and eggshell is often discarded as waste,the egg white which in the eggshell is extremely easy to corruption,produced effluvium and sewage.Which not only causes environmental pollution,but also wastes this valuable eggshell resource. This article introduces the structure and chemical composition of eggshell,and summarizes the research progress in the use of eggshell in recent years.
