浅谈我国大豆产品发展战略研究 被引量:1

摘要 中国不仅是大豆起源国,也是大豆加工食品的发祥地。通过简述豆腐、腐乳、酱油、大豆油脂等的开发史,多角度地浅析了我国大豆产品开发的历史。研究结果表明,在汉代和宋代,我国大豆产品开发达到了顶峰;豆腐等发酵制品大都在西汉年间问世;早在北宋年间我国就开始对豆油进行提取与利用,油脂与蛋白质的分离同时也是我国大豆开发利用的一项巨大突破。通过对大豆产品的开发研究,对我国在新形势下大豆产品的开发具有重要的指导意义。 China is not only the origin of soybean,but also the birthplace of soybean processed foods. This paper briefly described the development history of tofu, development history of the fermented bean curd, the development history of soy sauce,the development history of soybean oil,comprehensively analyzed the history of China soybean product development.The results showed that the golden time of Chinese ancient use of soybean was in the han and song dynasties. Soy protein products tofu was invented during the western han dynasty,and they were many yeast fermentation of soy products also appeared during this period. Soybean oil extraction and utilization of the earliest can date back to the northern song dynasty,and the protein and oil were separated from soybean seeds was a milestone in the history of soybean processing. Through the study on the development of soybean products,it has important guiding significance to the development of soybean products under the new situation in China’s development.
