不同储存方式对油脂样品过氧化值的影响研究 被引量:8

摘要 采集的油脂样品在运输和检测过程中,如果储存方式选择不得当和检测细节注意不到位,容易导致样品代表性和检测结果准确度的下降。因此,本文对不同油脂样品在不同储藏条件下过氧化值的变化规律进行研究。结果表明:经过2个月的储藏,在常温、冷藏和避光3种储藏方式下油脂样品过氧化值的增幅分别为23.7%~32.3%、17.8%~29.0%和0.3%~8.8%。避光储藏方式与冷藏和常温储藏相比更能延缓油脂的氧化,过氧化值的增加也相对较小;在该条件下储藏能够保证样品的代表性和检测结果准确度。另外,密封的样品在开封后需要立即进行检测,以防止测定的过氧化值的结果偏高。 From sampling to testingto ensure stability and original of sample, effective oil storage methods wereselected.Variation of lipid peroxide valueof different oil samples under different storage conditionsand their influence factors were explored.Oil samples were stored two months under room temperature storage, refrigerated storage and dark storage conditions, percentage increases of which peroxide valuewere 23.7%-32.3% 17.8%-29.0% and 0.3%-8.8%, respectively.Results showed that compared to refrigeration and room temperature methods, dark storage method had betterinhibition of oil oxidation, increasing peroxide value was relatively small; under which storage could ensure stability and original sample. In addition, sealed sample should be measured immediately to prevent peroxide value increasedafter opening.
