摘要
现代研究发现,花生壳中膳食纤维含量达到60%,是生产膳食纤维廉价的原料。本文以花生壳为原料,通过单因素和正交试验确定了酸碱结合法提取花生壳不溶性膳食纤维的最佳工艺。优化工艺下不溶性膳食纤维的得率为87.23%,纯度为97.33%,得到不溶性膳食纤维的产品为米黄色,气味较好。
Dietary fiber content in peanut shell reached 60% by modern research report, and it was cheap raw materials of extracting dietary fiber. In this paper, peanut shells were studied as main raw material, and optimum extraction method to be determined through single factor and orthogonal test. Under optimum extraction conditions, yield of IDF were 87.23%, purity was 97.33%, and insoluble dietary fiber products were yellow, and smell good.
