摘要 采用现代检测技术,跟踪分析了宋河酒曲在培养过程中曲皮、曲心主要理化指标的变化规律,并详细记录了室温、曲心温、曲房湿度在酒曲培养过程中的变化趋势;同时关于理化指标在酒曲贮存过程中变化的系统研究,揭示了酒曲在贮存中主要理化指标的演变规律。该项目的研究为酒曲培养、酒曲贮存、酒曲使用提供了理论依据,对培养优质酒曲、合理制定贮存期以及科学使用酒曲具有重要的意义。 By employing modern detection technology, variations of the main physical and chemical indexes of the crust and core of Songhe distiller's yeast in the cultivation process are tracked and analyzed, and the variation trends of room temperature, yeast core temperature and yeast bank humidity in the yeast cultivation process are also recorded in detail. And, the systematic study of the physical and chemical indexes of yeast during the storage process reveals some variation rules of those indexes. The research thus provides a theoretical basis for yeast cultivation, storage and use, and is of great significance for cultivating high- quality yeast, formulating a reasonable storage period and utilizing yeast scientifically.
