扳倒井第九车间窖壁窖泥的研究

摘要 以扳倒井第九车间窖池中的窖壁窖泥为研究对象,以窖壁黄水线为界,上下分别取样混合,分析检测其感官、水分、p H、铵态氮、有效磷、腐殖质和梭菌数量,同时进行窖泥样品的液态发酵蒸馏试验,蒸馏液经过气相色谱仪、气相质谱联用仪和液相色谱仪定性定量的综合分析,结果表明使用时间越长,黄水线以下部分的窖壁窖泥老熟的情况越好,其中的梭菌数量相对越多,杂菌越少。这证明在浓香型大曲酒的生产发酵过程中,黄水对窖泥的老熟,对窖泥微生物的驯化,起着重要的作用。 In order to Bandaojing ninth workshop pit in pit mud pit wall as the research object, by the pit wall yellow waterline was bounded, upper and lower respectively sampling mixed, detection and analysis of the number of senses, moisture, pH, ammonium nitrogen, effective phosphorus, humus and Clostridium, liquid fermentation pit mud sampled simultaneous distillation experiment, comprehensive analysis of spectrometer and liquid chromatography qualitative and quantitative distilled liquid by gas chromatograph, gas chromatography mass spectrometry, the results showed that the use of longer, yellow below the waterline parts of the pit wall pit mud aging situation was better, the number of Clostridium bacteria were relatively more, the others were lesser.
