摘要 白酒为我国的传统酿造行业,同时也是世界六大蒸馏酒之一,但白酒固态发酵生产多年来一直以手工操作为主,随着科技的发展,白酒固态发酵生产技术也发展迅速,自动化、信息化、智能化的开发已成为白酒固态发酵生产的潮流,研究了白酒固态发酵自动化发展方向,旨为白酒的自动化、信息化、智能化提供新思路。 Liquor is a traditional brewing industry in China and one of the six distilled liquors in the world. However, the production of liquor by solid-state fermentation has been dominated by manual operation for many years. With the development of science and technology, the production technology of liquor by solid-state fermentation has developed rapidly. The development of automation, informatization and intelligence has become the production of liquor by solid-state fermentation. In order to provide new ideas for the automation,informationization and intellectualization of liquor, this paper discussed the development direction of liquor solid-state fermentation automation.
