洋河绵柔型大曲品温变化规律及控制研究

摘要 大曲发酵品温是影响曲质重要因素,洋河绵柔型大曲对品温控制有严格的要求,利用曲房智能监测系统对房内不同空间位置的大曲品温进行春、夏、秋三个季节跟踪监测,绘制变化曲线,拟合出数学模型。结果表明:各季节绵柔型大曲品温变化符合'前缓、中挺、后缓落'规律,使用MATLAB软件分析数据,采用高斯八阶函数曲线模型拟合原始品温数据的效果较好;通过对首房曲工艺的改进,成功提高了首房大曲品质;并对绵柔型大曲生产过程品温调控技术进行总结概述。 Temperature is the key factor of daqu quality,and the fermentation temperature of Yanghe Soft-base flavor daqu was controlled strictly.In our study,digital pits intelligent monitoring system was applied to investigate the temperature variation of different site-located daqu through three seasons(Spring,Summer and Autumn),then variation curve was achieved to fit out the mathematical model.Results showed that the temperature variation of soft-base daqu fermentation in three seasons conformed to the law of'Increasing slowly in prior period,Keeping stable in medium period and Decreasing slowly in late period',data analysis was carried out by the MATLAB software,and eight-order Gaussian function curve fitting model for the temperature data was good.By improving the process of the first house daqu,the quality of the first house was improved successfully.Moreover,temperature control skills of Soft-base flavor daqu during the fermentation progress were summarized.
