隋唐宋时期“射洪春酒”酿造工艺及文化价值探析

射洪位于四川盆地腹心区域,得天独厚的'水(质)、土(壤)、气(候)、(微)生(物)'生态环境决定了自古就是好酒的出产地。史载,射洪酿酒历史悠久,至隋唐',射洪春酒'名扬天下,历隋唐宋三朝,享誉华夏近700年,继而传承发展为明代'东山谢酒'、清代'沱酒'和今天的中国名酒'沱牌曲酒'和文化国酒'舍得酒'。深入阐述了'射洪春酒'酿造工艺的诞生与传承过程,解答了杜诗'射洪春酒寒仍绿'之本意,考证了'射洪春酒'隶属'剑南烧春'的史实,剖析了'射洪春酒'在诗酒文化史上的巨大价值。

The flood is located in the hinterland area of Sichuan Basin,the unique water quality,soil,climate,microorganism ecological environment determines it has been the origin of good wine since ancient times.In history,Shehong Brewing has a long history of making wine,In Sui and Tang Dynasties,Shehong Chunjiu was famous all over the world,which had covered the three Dynasties of Sui,Tang and Song Dynasties and renowned for nearly 700 years in China.And then it developed into the Ming Dynasty Dongshan Xiejiu,Qing Dynasty Tuo Jiu and today’s famous Chinese wine Tuopai Qujiu and cultural wine Shede Jiu.This paper deeply expounds the birth and inheritance process of Shehong Chunjiu and brewing process.It also answers the original meaning of Du Shi’s Shehong Chunjiu in the cold condition is still green,verifies the historical facts of Jiannan Shaochun and gives the analysis of the great value of Shehong Chunjiu in the history of poetry and wine culture.
