摘要
研究蒙古马不同部位肌肉的肌纤维特性,为寻找马肉嫩度指标提供基础数据。选用成年雄性蒙古马3匹,分别从颈部的夹肌、前肢的臂三头肌、背部的背最长肌和后肢的臀中肌中采集肌肉样品,制成石蜡切片后,利用免疫组织化学方法对各部位肌肉的肌纤维进行分型并用图像分析软件对肌纤维平均直径进行测定。结果显示,夹肌的慢肌纤维占比显著高于其它各部位肌肉,背最长肌和臀中肌的快肌纤维占比较高;臀中肌的肌纤维平均直径显著低于其它各部位肌肉。夹肌和臀中肌均为嫩度较高的肌肉,是为理想的食用部位。
Study the muscle fiber characteristics of muscles in different parts of Mongolian horses,and provide basic data for finding horse tenderness indicators.Three adult male Mongolian horses were used,and muscle samples were taken from the splenius of the neck,the triceps of the forelimbs,the longissimus dorsi of the back and the gluteus medius of the hind limbs,and the paraffin sections were used to make immunohistochemistry.The results showed that the proportion of slow-twitch muscle fibers of the splenius was significantly higher than that of other parts of the muscles.The proportion of fast-twitch muscle fibers of the longissimus dorsi and gluteus medius were higher.The average diameter of the muscle fibers of the gluteus medius was significantly lower than that of other muscles.The muscles of the splenius and the gluteus medius displayed a higher tenderness,which is the ideal eating part.
