摘要
亚硝酸盐作为护色剂、防腐剂广泛用于食品加工中,但亚硝酸盐同时具有较强的致癌作用,过量食用会对人体的健康产生威胁和危害,国家食品标准对不同食品中亚硝酸盐含量有不同的规定。在食品加工中需严格控制亚硝酸盐的加入量。本文就食品中亚硝酸盐含量的测定方法及其研究进展进行综述。
Nitrite as color protecting agent and preservative,is widely used in food processing.But at the same time the nitrite carcinogen,excessive consumption will produce threat and do harm to the health of human body.National food standards have different provisions on the content of nitrite in different food.To strictly control the amount of nitrite in food processing,this paper reviews the advances of the determination methods of the content of nitrite in food and its research.
