摘要
为了解内蒙古二连浩特市餐饮业餐具的卫生状况,分别于2014年春季和秋季采集二连浩特市891家饭店、食堂的餐具,共3 845件,按照GB14934-94《食(饮)具消毒卫生标准》进行大肠菌群的检测,按照GB4789-2010《食品卫生微生物学检验》进行沙门氏菌和志贺氏菌的检测。结果显示,餐具大肠菌群的总体合格率为70.03%,沙门氏菌和志贺氏菌的合格率为100%。在该次检测中,没有检测到常见致病菌沙门氏菌和志贺氏菌,但大肠菌群检测合格率较低,需进一步加强监测管理。
In order to understand the health condition of tableware in restaurants of Erenhot of Inner Mongolia, a total of 3 845 sets of tableware were collected in 891 restaurants during April and November 2014. The collected tableware samples were screened for the presence of coliform by using the method recommended by the national standard GB 14934-94 and for the presence of Salmonella and Shigella by using the method recommended by the national standard GB 4789-2010. The results showed that the qualified rate of tableware for coliform was 70.03%and that for Salmonella and Shigella was 100%. The presence of the common food-borne pathogenic bacteria, including Salmonella and Shigella, was not found. However, the qualified rate of tableware for coliform was relatively lower, indicating that further monitoring in health condition of tableware in restaurants of this region is needed.
