齐鲁饮食尚食葱蒜的表现及形成因素探析

摘要 齐鲁饮食尚食葱蒜,葱蒜在齐鲁人日常饮食生活中占有重要地位。民众不仅喜欢生食葱蒜,还在菜肴制作中,将葱蒜作为主配料或调味料使用。尚食葱蒜饮食习俗的形成受多重因素的影响,它以齐鲁地区葱蒜种植历史悠久且品质上佳为基础,又与民众日常饮食需要、饮食养生、群体性格的形成与推动等紧密相关。 People in Shandong area like to eat scallion and garlic which play an important role in their daily diet.People in Shandong not only like to eat raw scallion and garlic,but also use them as the main ingredient or condiment in the cooking.The custom of eating scallion and garlic is influenced by many factors,which include the long history and excellent quality of scallion and garlic planting in Shandong region.Also,it is closely related to the needs of people’s daily diet,diet regimen,and the formation and promotion of group personality.
