摘要
1 前言Aspartame(简称 APM)是一种甜度高(其甜度约为蔗糖的200倍)、热值低、安全性好的新型二肽甜味剂。我国已将 Aspartame 的工业化生产列入“八五”攻关计划,具有很大的发展潜力和良好的应用前景。Aspartame 合成的常见方法有化学合成法和酶法。化学法不需催化剂,工艺比较简单.但须用 L-phe 作原料,在合成过程中产生有苦味的副产物β-Aspartame,产率较低。
The kinetics of the thermolysin-catalyzed synthesis of the dipeptide sweetener aspartame(α-L -Asp-PheOMe)from N-(benzyloxycarbonyl)-L-aspartic acid(Z-L-Asp)and L-phenylalanine methyl ester(L-PheOMe)has been studied in an aquous system.The effects of the substrate con- centration,reaction temperature.pH.substrate varities and Ca^(2+) ion on enzyme reaction were dis- cussed.A two-substrate enzyme catalyzed reaction model was proposed,which was in good agree- ment with the experimental data.
