摘要
研究了以咸鸭蛋黄、薯泥为主要原料制成无蔗糖馅料 ,再以此馅料生产低糖月饼的配方、工艺。
Salted duck egg yolks and sweet potatoes as major raw materials were made into saccharose free pies, with which low sugar moon cakes were produced. Studied in this paper were the formula, process flow, technical essentials and quality standards for producing such moon cakes.
