摘要 目的 观察烹调胡麻油烟冷凝物对小鼠肝组织Zn ,Cu ,Fe,Ca元素含量的影响。方法 昆明种小鼠 5 0只随机分成 5组 ,分别为高、中、低染毒组 (胡麻油烟冷凝物经口灌胃剂量分别为 2 5 ,5 0 ,10 0mg/kg) ,纯胡麻油组及阴性对照组。经口灌胃染毒 ,1次 /d ,共 30d。结果 中、高剂量染毒组小鼠肝组织内Zn ,Cu含量明显低于阴性对照组 (P <0 0 5或P <0 0 1) ,高剂量染毒组小鼠肝组织内Cu含量明显低于纯胡麻油组 (P <0 0 5 ) ,中、高剂量染毒组小鼠肝组织内Fe ,Ca含量明显高于阴性对照组及纯胡麻油组 (P <0 0 5或P <0 0 1)。结论 烹调胡麻油烟冷凝物可使小鼠肝组织内Zn ,Cu元素含量明显降低 ,Fe ,Ca元素含量明显升高。 Objective To observe effects of siritch vapor condensate (SVC)on Zn,Cu,Fe and Ca contents in mice liver tissue.Methods 50 Kunming mice were randomly divided into 5 groups, i.e. high,medium, and low dose group(SVC was administered by gavage at dosage of 2 5 mg/kg , 5 0 mg/kg ,and 10 0 mg/kg respectively),pure siritch oil group and the control group; and the gavage was given once a day for 30 days.Zn,Cu,Fe,Ca in mice liver tissue were observed.Results Contents of Zn and Cu in medium and high dose groups were significantly lower than those of control group(P<0 05 or P<0 01). For Cu,it was lower in high dose group than in pure siritch oil group(P<0 05),while for Fe and Ca,they were significantly higher in medium and high dose groups than in control group(P<0 05 or P<0 01).Conclusions Contents of Zn,Cu,Fe and Ca may be changed by SVC in liver tissue of mice.
