宁杞9号枸杞叶芽营养成分分析

摘要 为给叶用枸杞新品种宁杞9号的开发利用提供参考依据,对其叶芽营养成分进行了测定与分析。结果表明:宁杞9号五叶一芽和两叶一芽氨基酸总量分别为46.1 mg/g、73.3mg/g,人体必需氨基酸占氨基酸总量47.70%和45.53%;矿质元素含量丰富,微量元素含量顺序为铁>锌>锰>铜,常量元素含量顺序为钾>钙>钠>镁>磷;宁杞9号五叶一芽和两叶一芽中具有保健作用的枸杞多糖、甜菜碱等含量较高,分别为34 mg/g和35 mg/g,6.2 mg/g和7.4 mg/g;维生素含量丰富,检测到维生素类的总含量为4.03mg/g及6.06 mg/g;脂肪、碳水化合物及能量含量较低,蛋白质及膳食纤维含量较高;与宁杞1号枸杞果实比较除枸杞多糖含量略低外,其余营养成分均为枸杞果实的2倍以上;综合分析认为宁杞9号枸杞叶芽是一种健康养生食品。 The Nutritional Components of Ningqi #9 wolfberry sprouts were analysised, for further development and utilization. The results showed that the total amino acids in five leaves one bud and two leaves one bud were 46.1 mg/g and 73.3 mg/g, and the ratio of essential amino acid in the total amino acids(EAA/TAA) were 45.53% and 47.70%. The Ningqi #9 wolfberry sprouts were rich in mineral elements, the order of trace mineral elements contents were Fe > Zn > Mn>Cu,major mineral elements were K >Ca>Na>Mg> P;. The content of LBP, betaine and other hygienicial components were high; The content of LBP in five leaves one bud and two leaves one bud were 34 mg/g and 35 mg/g, betaine were 6.2 mg/g and 7.4 mg/g. The detected total content of vitamins in five leaves one bud and two leaves one bud were 4.03 mg/g and 6.06 mg/g. The content of fat, carbohydrate and energy were lower, protein and dietary fiber were higher.All the detected nutrient composition in Ningqi #9 wolfberry sprouts were 2 times higher than in Ningqi #1 wolfberry fruit, except for LBP. Comprehensive analysis showed that Ningqi #9 wolfberry sprouts were a healthy, high-grade nutrient food.
