The competition essence between chicken and MSG has aroused general concern, which is a focus in the trade of seasoning. The author interviewed Mr. Chen Xingpin, vice president of Totole Company that is famous producer of chicken essence. In his opinion, chicken essence is better seasoning than MSG, due to good taste and less harm. Chicken essence's demand grows rapidly and has become an important part in Chinese kitchen. The processing of chicken essence has high request on environment, close to medicine factories.
