摘要
研究了颗粒α化修饰玉米、木薯和甘薯淀粉的结晶特性,从X衍射图谱对其结晶变化进行了对比分析.结果表明,颗粒α化修饰淀粉己完全失去原淀粉具有的微晶结构,呈现亚微晶态和V型衍射的混合态.
This paper studied modified pregelatinized starches crystalline properties.The results showed that modified pregelatinized starches lost the crystalline structure in the starch granules.The X ray pattern of modified pregelatinized corn,tapioca and sweet potato starches gave the mixture of sub-crystal and V type crystal.
