摘要
欧李果颜色鲜艳并含有大量的水溶性红色素,是一种极好的天然色素资源.本文通过对欧李红色素的光谱特性研究,初步确定欧李红色素属于花青素类化合物.
Cerasus humilis fruit contain water soluble red pigment,It is a kind of excellent nature pigment resource.The spectral characteristics of Cerasus humilis red pigment were studied,and the pigment was speculated as anthocyanis.
