摘要
介绍了超微细粉碎技术的基本原理、主要设备种类及其基本性能;简要阐明了与食品物化特性相适应的气流超微细粉碎技术的主要特点;论述了超微细粉碎技术在提高食品品质、改革生产工艺、利用和开发食物资源等方面的重要作用与优势。
The fundamental principles and the main kinds and key functions of equipment of ultromicro disintegrating technology have been introduced. The main properties of ultromicro disintegrating technology with compressed air, which suits the physical and chemical characteristics of food well, have briefly been explained. And the important effects of ultromicro disintegrating technology for increasing the food quality, reforming the processes and utilizing and developing the food resources have been expounded.
