摘要
以活鳗为原料,研究了调味烤鳗片加工过程中的主要技术参数,从而确定了调味烤鳗片加工的最佳工艺条件。多次实验结果表明,在本工艺条件下研制的调味烤鳗片其色泽好,口感佳,滋味鲜美,并具有烤鳗片特有的香味。
This paper inquires into the key technology pararmeters in the processing the flavored toasted Astroconger myriaster slices,the material of which is from live Astroconger myriaster,so that the optimum technological conditions were defined.The results of many experiments showed that the color is light,the sense of mouth is good,the taste is fresh and delicious,and keep the characteristic sweet smell of that toasted fish made under the optimum conditions.
