摘要
对食用天然杨梅色素的性质进行了研究 .该色素对热、光照等具有稳定性 ,该色素溶液随 pH值的变化而发生变化 ,变色灵敏且可逆 .可以做酸碱指示剂 。
The properties of edible arbutus pigment are studied in the paper. The pigment is stable to heat and light. The solution of the pigment varies with the change of pH value. The color changes sensitively and could invert. Applied experiments show that it can be used as acid-base indicator.
