2001年莱芜市食品卫生监测结果分析 被引量:4

摘要 目的 :了解莱芜市食品卫生状况 ,找出影响食品卫生合格率的因素 ,为提高食品卫生质量提供理论依据。方法 :随机抽取流通领域及生产厂家的食品。所有样品检验项目均按相应国家标准检验方法及卫生标准来进行检验和评价。结果 :监测食品 114 0件 ,合格率 90 .70 % ;流通领域及生产厂家的食品卫生监测合格率分别为 90 .4 5 %和 91.32 % ,差异无显著性 (χ2 =0 .2 1,P>0 .0 5 ) ;理化指标和微生物指标监测合格率分别为 95 .82 %和 89.98% ,差异有显著性 (χ2 =2 2 .79,P<0 .0 1)。结论 :应加强食品卫生监督管理 ,严格食品生产企业无菌设施的建设和无菌操作技术规范化的管理 ,防止微生物等有害物质在食品加工运输销售过程中的污染。 Objective:In order to acquaint with the conditions of food hygiene in Laiwu,to find out the factors affecting the eligibility rate of the food hygiene and provide the thcrcitcal rcfcrncc for boosting the quality of food hygiene.Methods:Using random sampling form circulation and production fields.All samples were monitored and assessed following the examing methods provided by the country standard and hygicnic standard accordingly.Results:1034 were cligiblc among 1140 selected for monitoring,accouting for 90.70 percent.throgh the surveillance the eligibility rate in circulation field was 90.45 percent,and that in production field was 91.32 perccnt.The two mane on statistial differencc.the elinibility ratc of the aamples treated chemically and physically was 95.82 percent,and that of the samples treated by microbe technique was 89.98 percent.The two made statistical difference.Conclusions:In the inspection and management,we should strengthen the construction of asepsis facilities and the mainagement of fhe standardization of ascpsis opcration tchniquc,to protcct food from hazardous contaminants including microorganism in the process of production,transportation and sale.
