摘要
为研究生物防霉去毒 ,探讨了乳酸菌吸附黄曲霉毒素B1的强度及被吸附的黄曲霉毒素B1的致突变性。将乳酸菌细胞与黄曲霉毒素B1在生理盐水中相混合 ,在 37℃振荡培养 6 0min和 12 0min后检测生理盐水中黄曲霉毒素B1的含量 ,同时利用Ames试验检测被吸附的黄曲霉毒素B1的致突变性。结果表明 ,在使用的 8株乳酸菌中 ,乳酸菌结合黄曲霉毒素B1的强度在 4 %~ 5 0 %之间 ,其中干酪乳杆菌干酪亚种CGMCC 1 5 39吸附黄曲霉毒素B1能力最强。Ames试验表明 ,被结合的黄曲霉毒素B1仍有较强的致突变性。
The toxin binding ability of eight strains of lactic acid bacteria for aflatoxin B 1 were studied. Lactic acid bacteria were mixed with aflatoxin B 1 and incubated at 37℃ for 60 mins and for 120 mins. The toxin binding ability of the lactic acid bacteria ranged between 4%~50%. Among the lactic acid bacteria studied, L.casei subsp.cacei CGMCC 1 539 demonstrated a sigficantly high aflatoxin binding ability than other strains.However, chloroform extracts of binding aflatoxin B 1 exhibited mutagenic effect. Lactic acid bacteria had the effect on binding aflatoxin B 1, and Ames test showed that binding aflatoxin B 1 exhibited mutagenic effect.
