摘要
大豆肽是大豆蛋白水解后,由3～6个氨基酸残基组成的低肽混合物,分子量在1000Dalton左右。由于它具有很多优良的理化特性和生理活性,因此有很多领域得到了广泛的应用。本文简要综述了这方面的研究进展。
Soybean peptides is the hydrolysate of soy protein and a mix of low peptides which composis of three to six residences.Its molecular weigh t is about 1000Da.because of its good functional properties and physiolo gical activ-ities,it is used in amy fields.This t hesis brefly summarize the progress in this field.
