摘要
针对传统工艺的不足,用现代生物技术对猪血提取血红素的生产工艺进行了提升。这种工艺具有原料易得、产品色度好、易于工业化等特点;通过加入发色剂和助色剂,所得产品色泽好、溶解性好、特别适于肉灌制品。
With updated biotechnology, improvement was made on the industrial extraction process of heme from porcine blood, aiming to bypass the disadvantages of the conventional process. The new technique enjoys an easy access to raw materials, desirable color in finished product and high industrializability. With addition of color fixatives and color auxiliaries, the product produced by this improved process is characterized by good color and good solubility, especially good for meat products such as sausages.
