摘要
通过对猪的屠宰试验证明,运输应激不但引起猪的死亡率升高、而且直接影响肉品质量。运输距离和环境温度是引起肉品质量下降的主要因素。
Transportation affected not only on increase of death rate of pig but also on degradation of the quality of pork. The transportation distance and enviornmental temperature were the main reasons for the degradation of pork quality.
