Preparation of Soybean Protein Concentrate with Mixed Solvents of Hexane-Aqueous Alcohol

摘要 Preparation of soybean protein concentrate with the mixed solvents of hexane-aqueous alcohol was studied in this paper.The optimum technology parameters were obtained by orthogonal tests.The results of experiments showed that the qualities of the product were good not only on taste of the product were good not only on tasted and color,but also on high solubility-NSI value was 48.80%.
