摘要
甘薯(Ipomoeabatatas)是世界上重要的粮食、饲料和工业原料作物,普遍种植于世界上热带和亚热带地区的100多个国家。甘薯营养丰富、养分平衡,营养价值不低于米、面。着重阐述了甘薯块根及茎叶中的主要营养成分及化学组成,并就各种营养成分如胡萝卜素、维生素B1、B2、C、E、食用纤维、钾素、钙、铁、磷、硒等矿物质,脱氢表雄酮、粘液蛋白、准女性激素等的保健作用和药用价值进行了介绍,以促进人们加深对甘薯营养成分的多样性及保健功能的认识。
Sweet potato is the main crop for food, fodder and industrial material in the world. It is planted in more than 100 countries which are in the tropics and subtropics. Sweet potato is rich in nutrition and nutrient balance. Its nutrient value is no fewer than rice and wheat flour. This paper focused on the main nutrient components and their chemical composition of sweet potato roots and vines, and made a brief introduction on the health care function and medicinal value for different nutrient components such as carotene, VB1,VB2, VC, VE, editable fiber, minerals (K, Ca, Fe, P and Se), dehydroepiandrosterone, slime protein, quasi female hormone et al., in order to make people learn more about the diversity and healthy care function of nutrient components of sweet potato.
