低乳糖牛奶水解率的快速测定方法研究

The research of method testing about hydrolyze rate of low lactose milk

以Willstarter和Schudel的醛糖测定方法(亦即碘量法)为依据,从乳糖水解反应的本质出发,提出并建立了一套快速测定低乳糖牛奶水解率的新方法。结果表明,该方法具有使用方便快捷等特点,可以代替文献中所介绍的测定方法,进行低乳糖牛奶生产中的常规性的检测分析。

The following description is based o n the testing method of aldose which i s performed by Willstarter and Schudel's.This testing technique has set up a new and fleetly way for testing the hydr olyze rate of low lactose milk.The re sult of the experi-ment indicated that this testing technique can used more conveniently ,m ore fleetly and accurately.The meth od can be used to measure the hydrolyze rate of low lac tose milk processing,and instead of information method.
